Just beyond the famous coastal landmarks lie the rich inland valleys of California. Incorporating goat cheese and pistachios, this very California guacamole satisfies a regional preference for fresh and flavorful.
Ingredients
- 2.000 2 ripe, Fresh California Avocados, seeded and peeled
- 0.500 ½ cupfinely crumbled, chilled, fresh white goat cheese
- 0.250 ¼ cupchopped, fresh cilantro
- 2.000 2 Tbsp.chopped, toasted pistachio nuts
- 0.250 ¼ tsp.crushed red pepper flakes (or to taste)
- 2.000 2 large cloves garlic, finely chopped
Instructions
- Coarsely mash (DO NOT PUREE) avocados.
- Fold in remaining ingredients.
Serving Suggestions:
Serve with fresh vegetables for dipping.
Beverage Pairings:
Try with your favorite California wine.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.
